Glycation is the post-translational modification of proteins, linking a reducing sugar to an amino group on a protein. Advanced glycated end product (AGE) epitopes are thought to be involved in structural and functional alterations of proteins observed in aging and diabetes. Increases in pentosidine levels are associated with aging, diabetes, cataracts, renal diseases, chronic rheumatoid arthritis, photaged skin and Alzheimers disease. Carboxymethyllysine is involved in uracemia.
