Store lyophilized/reconstituted at -20°C; once reconstituted make aliquots to avoid repeated freeze-thaw cycles. Please remember to spin the tubes briefly prior to opening them to avoid any losses that might occur from material adhering to the cap or sides of the tube.

7S globulins are major seed storage proteins in many dicot plants (notably legumes such as soybean, pea, and peanut) belonging to the cupin superfamily and commonly termed vicilins. They accumulate abundantly in protein storage vacuoles during seed development and are mobilized during germination to supply amino acids, nitrogen, and sulfur for seedling growth. Structurally, 7S globulins assemble as trimeric complexes of ~150-200 kDa, each subunit containing tandem cupin (beta-barrel) domains; they are synthesized as precursors on the rough ER, glycosylated, and targeted to vacuoles via receptor-mediated trafficking. Their amino acid composition and digestibility influence seed nutritional quality, processing functionality (emulsification, foaming, gelation), and allergenicity several vicilins are clinically relevant allergens (e.g., Ara h 1 in peanut). Expression is controlled by seed specific transcription factors and hormonal cues (ABA, GA) and can vary among cultivars and environments. Genetic modification or breeding for altered 7S globulin content and structure affects seed protein quality, texture in food applications, and stability under storage conditions.
