Tartrazine, also known as FD&C Yellow #5 or E102, is a synthetic lemon yellow azo dye widely used as a food colorant, cosmetic additive, and in pharmaceuticals. Its molecular structure consists of a sulfonic acid group, which contributes to its water solubility. Tartrazine is approved for use in the EU, USA, Canada, and other regions, but it has raised concerns regarding consumer safety due to potential toxicological effects. Studies have shown that tartrazine can modify the activity of DNMT and HDAC genes, which are involved in carcinogenesis and neurological disorders. The dye's impact on DNA methylation and histone deacetylation suggests it may influence gene expression and epigenetic regulation. Despite its widespread use, ongoing research continues to evaluate its safety and effects at doses relevant to human exposure.
