Selectively enumerate yeasts and molds from foodstuffs with Thermo Scientific™ Oxoid™ Oxytetracycline Glucose Yeast Extract Agar Base (Dehydrated). 1,2. The medium is based upon the formulation described by Mossel et al.3 which utilizes oxytetracycline selectivity to provide increased counts of yeasts and molds compared to other media that utilize a low pH as a selective agent. Improve the recovery of physically stressed yeast cells on this neutral pH medium4.

The choice of suitable medium for enumeration of yeast and moulds is greatly dependent on the nature of the foodstuffs under investigation and the organisms that occur on them5. Oxytetracycline Glucose Yeast Extract Agar Base remains bacteriostatic when inoculated with not greater than 1 mL of a 10-1 dilution of foods and subsequently incubated for not greater than 5 days at 25°C as is the customary practice in food mycology2.

For isolation of psychrotrophic yeasts from chilled proteinaceous foods a combination of oxytetracycline and gentamicin is effective6.
