Enterotoxin C, specifically staphylococcal enterotoxin C (SEC), is a protein toxin produced by Staphylococcus aureus, known for causing foodborne illnesses such as staphylococcal food poisoning. The gene encoding SEC, known as sec, is located on the bacterial chromosome and spans 801 base pairs, encoding a protein of 266 amino acids, including a 27 amino acid signal peptide. Upon cleavage of the signal peptide, the mature protein consists of 239 amino acids. SEC is part of a superfamily of staphylococcal enterotoxins, which exhibit potent superantigenic activity, disrupting adaptive immunity and leading to symptoms such as diarrhea and vomiting. The structural diversity of SEC variants contributes to its virulence and ability to cause a wide range of diseases. SEC's mechanism of action involves binding to major histocompatibility complex molecules and T-cell receptors, leading to massive cytokine release and immune system activation.
