Cyclodextrin glycosyl transferase (CGTase) is a bacterial enzyme belonging to the glycosyl-hydrolase family 13. This enzyme is capable of catalyzing more than one reaction including the synthesis of non-reducing cyclic dextrins (cyclodextrins) starting from starch, amylose, and other polysaccharides.
